Ostrich Egg

... and some eggs are big enough to feed a family ...
While visiting the Fremantle Markets last Christmas-time our visitors bought an Ostrich egg. I'd never seen an Ostrich egg before and certainly didn't know they could be bought. Its arrival certainly caused much interest and speculation.
An ostrich lays the largest egg of any living bird ... but it is the smallest egg laid if we compare, by ratio, the weight of the egg to the weight of weight of the bird.
There was much excitement as we contemplated making scrambled ostrich egg - some were eager to taste it - some were not so eager.
The shell of an ostrich egg is tough. It was difficult to crack, even with a heavy hand and a sharp knife.
The yolk of the ostrich egg was huge and it had a very tough skin. Compare it to the size of the hen's egg. The shell of the ostrich egg is also in the photo.
Ostrich eggs are nutritious.
One ostrich egg goes a long way. It has about the same amount of egg as 24 hen eggs. I enjoyed it. Some said it was like eating a hen's egg. I thought it had a strong egg flavour. Some had a couple of mouths full and didn't want any more. Some came back for a second helping. I'd recommend it.
